It doesn't matter much for the Server version since those don't see retail stores, at least I never saw Windows Server on sale at Best Buy etc. And they update it often, though they didn't change the name when they did Windows Server 2003 R2, it was a new release either way. Had new features and stuff that people wanted.
I think everyone expected this next version to be called Server 2007 though.
